Development of New Chip Products from Brewer’s Spent Grain

چکیده
Brewer’s spent grain (BSG) is a processing waste generated in large quantities by the brewing industry. It estimated that over 38 million tons of BSG produced worldwide each year and usually used as animal feed, composted, or thrown into landfills. contains valuable nutritional components, including protein, fiber, antioxidants. Due to its brittle texture, strong nutty flavors, dark color profiles, has seen limited use food products for human consumption. The objective this study was develop palatable chip product maximized level inclusion BSG. Chips were contained levels ranging from 8% 40%, physical sensory properties chips evaluated. Spent samples provided Iron Monk Stillwater dried at low temperature milled flour formulation. evaluated water activity, color, texture (fracture force). An informal evaluation conducted evaluate flavor, probability purchase using 5-point hedonic rating scale. Results showed there no significant differences containing different measurements between L ∗ id="M2"> values BSG, but some b id="M3"> values. consumers preferred with 40% they also more likely chips. Second Generation Ethanol Production from Brewers’ Spent Grain
Ethanol production from lignocellulosic biomasses raises a global interest because it represents a good alternative to petroleum-derived energies and reduces the food versus fuel conflict generated by first generation ethanol. In this study, alkaline-acid pretreated brewers’ spent grain (BSG) was evaluated for ethanol production after enzymatic hydrolysis with commercial enzymes. The obtained h...
متن کاملSelection of the Strain Lactobacillus acidophilus ATCC 43121 and Its Application to Brewers' Spent Grain Conversion into Lactic Acid
Six Lactobacillus strains were analyzed to select a bacterium for conversion of brewers' spent grain (BSG) into lactic acid. Among the investigated strains, L. acidophilus ATCC 43121 showed the highest yield of lactic acid production (16.1 g/L after 48 hours) when grown in a synthetic medium. It was then analyzed for its ability to grow on the hydrolysates obtained from BSG after acid-alkaline ...
متن کاملApplication of a new xylanase activity from Bacillus amyloliquefaciens XR44A in brewer's spent grain saccharification
BACKGROUND Cellulases and xylanases are the key enzymes involved in the conversion of lignocelluloses into fermentable sugars. Western Ghat region (India) has been recognized as an active hot spot for the isolation of new microorganisms. The aim of this work was to isolate new microorganisms producing cellulases and xylanases to be applied in brewer's spent grain saccharification. RESULTS 93 ...
متن کاملConsumer Acceptability of Crackers Produced from Blend of Sprouted Pigeon Pea, Unripe Plantain and Brewers’ Spent Grain and Its Hypoglycemic Effect in Diabetic Rats
Physical, sensory properties and hypoglycemic effect of crackers produced from sprouted pigeon pea, unripe plantain and brewers’ spent grain fed to diabetic rats were investigated. Different composite flours were used to produce crackers. Physical and sensory properties of the crackers, the blood serum of the rats and changes in the rat body weight were measured. Spread ratio and break strength...
متن کاملAnaerobic digestion of brewery spent grain in a semi-continuous bioreactor: inhibition by phenolic degradation products.
In this study anaerobic digestion of selected lignocellulosic substrate, namely brewery spent grain (BSG), was studied. In order to facilitate anaerobic digestion several types of pretreatment methods were tested such as: mechanical, chemical (alkali and acid) and thermo-chemical. The anaerobic digestion experiments were carried out in a semi-continuous stirred bioreactors with the organic load...
